Design and market implementation of innovative fortified
bakery and confectionery products
As part of the implemented project, innovative
bakery products were prepared and implemented, which significantly improved the quality and nutritional value of
products compared to the standard range. The introduced
technological solutions made it possible to reduce the salt content in wheat bread, reduce
sugars in yeast buns and reduce the amount of fats, including saturated
fatty acids, in doughnuts. In addition, novel
yeast buns and French
buns with plant-based filling, enriched with plant protein, were developed. The validation
of the technologies carried out confirmed the effectiveness of the new recipes, and the organoleptic evaluation
showed high consumer acceptance of the implemented products.
Implementation of industrial production of texturized proteins and plant-based
meat substitute
As part of the ongoing project, our team developed and implemented an industrial
process for the production of texturates based on pea and wheat proteins.
We carried out the optimization of the technological process, establishing key
parameters that allowed to obtain high-quality products. In addition
we have developed unique recipes, ensuring excellent taste and
textural properties of the final products. The project was completed in 4 months in
2024, and resulted in a state-of-the-art production line adapted to
industrial scale production of plant-based meat substitutes.
Designing a line of vegan products
As part of the ongoing project, our team developed and implemented a production line
dedicated to plant-based meat substitutes based on hemp protein and
pea protein. The technological process was optimized in terms of key
production parameters, which made it possible to obtain high-quality products with
appropriate structure, taste and nutritional value. Particular attention
was paid to the selection of appropriate additives and supporting ingredients,
in accordance with current national and EU regulations on
food safety and food production. As a result, the line meets
the highest quality standards, and the products meet the growing
market demand for plant-based meat alternatives. The project was implemented in May 2022, and
its result is a modern, efficient production line, enabling
scalable and compliant production of innovative vegan products.
